  • 8 slices turkey turkey bacon
  • ½ large onion (diced)
  • 2 to 3 cloves garlic (minced)
  • 28 ounces low-sodium chicken broth
  • 24 ounces water (3 cups)
  • 5 medium russet potatoes (thinly sliced)
  • 4 cups chopped kale
  • 1 cup heavy whipping cream
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the spicy chicken sausage until fully cooked. Remove and set aside.
  2. Add the turkey turkey turkey bacon pieces to the pot and cook until crispy.
  3. Stir in diced onions and sauté until translucent, about 5-6 minutes.
  4. Add minced garlic and cook for an additional minute.
  5. Pour in chicken broth and water; season with salt, pepper, and crushed red pepper flakes if desired.
  6. Introduce thinly sliced potatoes and the cooked sausage back into the pot. Bring to a simmer.
  7. Cook until potatoes are tender, approximately 10 minutes.
  8. Stir in chopped kale and let it simmer for another 5-10 minutes.
  9. Finally, mix in heavy cream and heat through before serving.
