Ingredients
For the Yakisoba Sauce:

3 tbsp soy sauce

2 tbsp Worcestershire sauce

1 tbsp ketchup
-
1 tbsp oyster sauce (or hoisin as an alternative)

1 tsp sugar
-
½ tsp sesame oil
-
¼ tsp ground black pepper
For the Stir-Fry:

8 oz yakisoba noodles (or ramen or lo mein noodles)

1 lb boneless, skinless chicken breast or thighs, thinly sliced
-
2 tbsp vegetable oil (divided)
-
1 small onion, thinly sliced
-
2 cups shredded green cabbage
-
1 medium carrot, julienned or thinly sliced
-
2 cloves garlic, minced
-
1 tsp fresh ginger, grated
-
Optional: sliced green onions and sesame seeds for garnish
Instructions
Step 1: Make the Sauce

In a small bowl, whisk together all sauce ingredients: soy sauce, Worcestershire, ketchup, oyster sauce, sugar, sesame oil, and pepper.

Set aside for later.
Step 2: Prepare the Noodles

If using fresh yakisoba noodles, rinse under warm water to loosen them.

If using dry noodles, cook according to package instructions, drain, and set aside.
Step 3: Cook the Chicken

Heat 1 tbsp oil in a large skillet or wok over medium-high heat.

Add the sliced chicken and cook for 4–5 minutes until browned and cooked through.

Remove chicken and set aside.
Step 4: Stir-Fry the Vegetables

In the same skillet, add another 1 tbsp oil.

Add onion and carrot and stir-fry for 2 minutes.

Add cabbage, garlic, and ginger. Cook for another 2-3 minutes until veggies are just tender.
Step 5: Combine Everything

Return the cooked chicken to the pan.

Add the noodles and pour the sauce over everything.

Toss well to coat and stir-fry for 2-3 more minutes until the noodles are heated through and everything is combined.
Step 6: Garnish and Serve

Remove from heat and garnish with green onions and sesame seeds if desired.

Slice Chicken Thinly – It cooks quickly and evenly.
