Ingredients

For the Salad:

  • 4 cups watermelon, cubed and chilled

  • 1½ cups cucumber, thinly sliced (preferably English cucumber)

  • 1 cup feta cheese, crumbled

  • ¼ red onion, thinly sliced

  • ¼ cup fresh mint leaves, chopped

  • 2 tbsp fresh basil leaves, torn

  • 1 tbsp pumpkin seeds or sunflower seeds (optional, for crunch)

For the Dressing:

  • 2 tbsp olive oil

  • 1 tbsp lime juice (or lemon juice)

  • 1 tsp honey

  • ½ tsp salt

  • ¼ tsp black pepper


Instructions

Step 1: Prepare the Watermelon and Cucumber

  1. Cut the watermelon into bite-sized cubes, removing any seeds if needed.

  2. Thinly slice the cucumber; if using a standard cucumber, peel it and remove seeds before slicing.

  3. Place the watermelon and cucumber in a large salad bowl.

Step 2: Add the Fresh Ingredients
4. Add the crumbled feta cheese, thinly sliced red onion, chopped mint, and torn basil to the bowl.
5. If using seeds for added crunch, sprinkle them over the top.

Step 3: Make the Dressing
6. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and black pepper.
7. Taste and adjust seasoning as needed.

 

Step 4: Assemble and Serve
8. Pour the dressing over the salad ingredients.
9. Gently toss everything together until well combined, being careful not to crush the watermelon.
10. Serve immediately or chill for 10 minutes before serving for extra refreshment.
