  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 stalks celery (or 1/2 small celery root), diced
  • 2 medium carrots, diced
  • 2 pounds potatoes, chopped
  • 1/2 tsp dried marjoram
  • Pinch of nutmeg
  • Salt and pepper to taste
  • 4 cups vegetable broth (or water)
  • 2 whole bay leaves (optional)
  • 1/3 cup dairy-free cream
  • Fresh parsley for garnish
  • Sliced vegan sausage (optional)

Instructions

  1. Heat oil in a large pot over medium heat. Add diced onion and sauté for about 3 minutes until softened. Stir in minced garlic, celery, carrots, potatoes, and spices; sauté for one more minute.
  2. Pour in the vegetable broth and add bay leaves if desired. Bring to a boil, then reduce heat to simmer for approximately 20 minutes, or until vegetables are tender.
  3. Remove bay leaves and blend half of the soup using an immersion blender until smooth. If using a regular blender, transfer carefully in batches.
  4. Return blended soup to the pot and stir in dairy-free cream until combined. Simmer for an additional few minutes, adjusting seasonings as needed.
  5. Serve hot, garnished with fresh parsley and optional slices of vegan sausage.
