Ingredients

Scale
  • 4 salmon fillets (skin-on)

  • 1 cup cherry tomatoes (halved)
  • 3 cups baby spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Zest and juice from 1 lemon
  • Fresh basil and parsley (for garnish)

Instructions

  2. Heat olive oil in a skillet over medium-high heat. Cook salmon skin-side down for 4-5 minutes until crispy; flip and cook for another 3-4 minutes until tender. Remove from skillet.
  3. In the same skillet, sauté garlic until fragrant. Add sun-dried tomatoes and cherry tomatoes; cook for 2-3 minutes.
  4. Stir in spinach until wilted, then add heavy cream, Parmesan cheese, and red chili flakes. Simmer for 2-3 minutes before adding lemon zest and juice.

  6. Garnish with fresh herbs before serving.
