Instructions
Step 1: Make the Turkey Sausage Gravy
-
In a large skillet, cook turkey sausage over medium heat until browned and fully cooked. Break it into small pieces as it cooks.
-
Push sausage to one side of the pan and melt butter on the other.
-
Sprinkle flour over the butter and whisk for 1 minute to make a roux.
-
Slowly stir in milk and chicken broth, combining with the sausage.
-
Add garlic powder, onion powder, thyme, salt, pepper, and red pepper flakes (if using).
-
Simmer for 5–7 minutes, stirring occasionally, until thick and creamy. Remove from heat.
Step 2: Prepare the Biscuit Dough
7. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
8. Cut in cold butter using a pastry cutter or forks until mixture resembles coarse crumbs.
9. Stir in buttermilk just until combined—don’t overmix.
10. Turn out onto a floured surface, gently knead 2–3 times, and pat into a ¾-inch thick rectangle.
11. Cut into 9–12 small biscuits using a round cutter or knife.
Step 3: Assemble the Pie
12. Preheat oven to 400°F (200°C).
13. Pour the sausage gravy into a greased 9×13 or deep pie dish.
14. Arrange biscuit dough evenly over the top.
15. Optionally brush biscuits with a little milk or melted butter for a golden finish.
Step 4: Bake Until Golden
16. Bake for 20–25 minutes, until biscuits are golden and cooked through.
17. Let rest 5 minutes before serving.
Notes
Keep the Butter Cold – Cold butter creates fluffy, flaky biscuits.
Don’t Overwork the Dough – Handle it gently to avoid dense biscuits.
Pre-Cook the Sausage Fully – Helps lock in flavor and texture.
Use Buttermilk – For tangy, tender biscuits (or make your own).
Add Cheese – Stir in ½ cup shredded cheese for extra flavor.
