Ingredients

4 large eggs
4 turkey sausage links or patties, cooked and crumbled
½ cup shredded cheddar cheese (or cheese of choice)
4 flour tortillas (8-inch size)
2 tbsp milk
1 tbsp olive oil or butter
Salt and pepper to taste

Optional Add-ins:
¼ cup diced bell peppers
2 tbsp chopped green onions
Hot sauce or salsa for serving


Instructions

Step 1: Cook the Turkey Sausage

  1. In a skillet over medium heat, cook turkey sausage until browned and fully cooked.

  2. If using links, chop or crumble into bite-sized pieces.

  3. Set aside.

Step 2: Scramble the Eggs

  1. In a bowl, whisk eggs with milk, salt, and pepper.

  2. Heat olive oil or butter in a skillet over medium heat.

  3. Pour in egg mixture and gently scramble until just set and fluffy.

  4. Remove from heat.

Step 3: Assemble the Roll-Ups

  1. Lay out tortillas on a clean surface.

  2. Divide scrambled eggs evenly among the tortillas.

  3. Add turkey sausage and a sprinkle of shredded cheese to each.

  4. Add any optional toppings like bell peppers or green onions.

Step 4: Roll and Toast

 

  1. Roll each tortilla tightly into a burrito shape.

  2. Place seam-side down in a clean, dry skillet over medium heat.

  3. Toast for 1–2 minutes per side until golden and the cheese is melted.

  4. Serve immediately or wrap for later.

Notes

Warm the Tortillas – Makes them easier to roll without tearing.
