Ingredients

For the Casserole:
1 lb turkey breakfast sausage (mild or spicy)
1 small onion, finely chopped
1 block (8 oz) cream cheese, softened
6 large eggs
½ cup milk (dairy or non-dairy)
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
½ tsp garlic powder
½ tsp black pepper
¼ tsp salt
½ tsp paprika (optional, for flavor and color)

Optional Add-ins:
1 cup chopped spinach or kale
½ cup diced bell peppers
¼ cup chopped green onions
½ tsp red pepper flakes (for a kick)


Instructions

Step 1: Cook the Sausage Mixture

  1. Preheat oven to 375°F (190°C).

  2. Spray your baking dish with nonstick spray or lightly grease with butter.

  3. In a skillet over medium heat, cook the turkey sausage and chopped onion until browned and fully cooked.

  4. Drain any excess grease, then stir in the cream cheese until melted and smooth. Remove from heat and let cool slightly.
