1 lb turkey breakfast sausage (mild or spicy)
1 small onion, finely chopped
1 block (8 oz) cream cheese, softened
6 large eggs
½ cup milk (dairy or non-dairy)
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
½ tsp garlic powder
½ tsp black pepper
¼ tsp salt
½ tsp paprika (optional, for flavor and color)
Optional Add-ins:
1 cup chopped spinach or kale
½ cup diced bell peppers
¼ cup chopped green onions
½ tsp red pepper flakes (for a kick)
Instructions
Step 1: Cook the Sausage Mixture
-
Preheat oven to 375°F (190°C).
-
Spray your baking dish with nonstick spray or lightly grease with butter.
-
In a skillet over medium heat, cook the turkey sausage and chopped onion until browned and fully cooked.
-
Drain any excess grease, then stir in the cream cheese until melted and smooth. Remove from heat and let cool slightly.
Step 2: Whisk the Eggs
-
In a large bowl, whisk together eggs, milk, garlic powder, pepper, salt, and paprika.
-
Stir in cheddar and mozzarella cheeses (reserve a little for topping if desired).
-
Mix in any additional veggies if using.
Step 3: Assemble the Casserole
-
Spread the sausage and cream cheese mixture evenly in the bottom of the baking dish.
-
Pour the egg mixture over the top, spreading evenly with a spatula.
-
Sprinkle reserved cheese on top for a golden crust.
Step 4: Bake
-
Bake uncovered for 30–35 minutes, or until the center is set and the top is golden.
-
Let rest for 5–10 minutes before slicing.
Step 5: Serve & Enjoy
-
Slice into squares and serve hot.
-
Garnish with green onions or fresh herbs if desired.
Notes
Soften Cream Cheese – Let it sit at room temperature for easy melting.
Don’t Overbake – Just bake until the center is set to keep it moist.
Add Veggies – Bell peppers, mushrooms, or spinach go great in this dish.
Make Ahead – Prep everything the night before and bake in the morning.
Let It Rest – Resting after baking helps it slice cleanly and keeps it creamy.
