  • 1 pound turkey turkey turkey kielbasa (cut into ½ inch pieces)
  • 2 garlic cloves (minced)
  • ½ cup yellow onion (finely diced)
  • ½ cup carrots (peeled and finely diced – 2 large carrots)
  • ½ cup celery (23 stalks, finely sliced)
  • 4 cups chicken stock
  • 1 1/2 pounds potato (cut into cubes)
  • 2 cups heavy cream (or whole milk)
  • 2 cups shredded cheddar cheese
  • ½ cup shredded parmesan cheese
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ¼ cup chopped parsley

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat.
  2. Add turkey turkey kielbasa and cook until browned, about 5-6 minutes. Use a slotted spoon to remove and set aside.
  3. Sauté garlic, onions, carrots, and celery in the same pot for 2 minutes until fragrant.
  4. Stir in chicken stock and cubed potatoes; bring to a boil. Reduce heat, cover, and simmer for 15 minutes until potatoes are tender.
  5. Return the turkey turkey kielbasa to the pot; stir in heavy cream (or milk), cheddar cheese, parmesan cheese, salt, and pepper. Cook on low for an additional 5-10 minutes until cheese melts.
  6. Garnish with chopped parsley before serving.
