Ingredients
For the Shrimp:

1 lb large shrimp, peeled and deveined

1 tbsp olive oil

½ tsp garlic powder

¼ tsp smoked paprika

Salt and pepper to taste

Juice of ½ lime
For the Coconut-Lime Sauce:

¼ cup coconut milk (full-fat for creaminess)

1 tbsp lime juice

1 tsp honey or maple syrup

½ tsp Dijon mustard

For the Bowl:

2 cups cooked jasmine or brown rice

1 cup fresh pineapple chunks

1 avocado, sliced

½ cup shredded red cabbage

¼ cup chopped cucumber

¼ cup sliced red onion (optional)

Instructions
Step 1: Cook the Shrimp

In a bowl, toss shrimp with olive oil, garlic powder, paprika, lime juice, salt, and pepper.

Heat a skillet over medium-high heat.

Sear shrimp for 2–3 minutes per side, until pink and cooked through. Remove from heat and set aside.
Step 2: Make the Coconut-Lime Sauce
4. In a small bowl, whisk together coconut milk, lime juice, honey, Dijon mustard, and a pinch of salt until smooth.
5. Chill until ready to drizzle.
Step 3: Assemble the Bowls
6. Divide cooked rice between serving bowls.
7. Top each with shrimp, pineapple, avocado, cabbage, cucumber, and red onion.
8. Drizzle with coconut-lime sauce and sprinkle with fresh cilantro.
Step 4: Serve & Garnish
