Instructions

Step 1: Make the Graham Cracker Crust

  1. In a medium bowl, combine graham cracker crumbs, granulated sugar, melted butter, and a pinch of salt.
  2. Stir until the mixture resembles wet sand.
  3. Press the crumb mixture evenly into the bottom of a 9-inch pie dish, tart pan, or springform pan. Press firmly to create a smooth, even crust.
  4. Refrigerate the crust while you prepare the filling.

Step 2: Prepare the Key Lime Pie Filling

  1. In a large bowl, whisk together the sweetened condensed milk, lime juice, lime zest, and egg yolks until smooth and well combined.
  2. Pour the filling into the chilled graham cracker crust and smooth the top with a spatula.
  3. Refrigerate the pie for at least 4 hours, or preferably overnight, to allow the filling to set.

Step 3: Make the Whipped Cream Layer

  1. In a chilled mixing bowl, use an electric mixer to beat the heavy cream on medium-high speed until soft peaks form.
  2. Add powdered sugar and vanilla extract and continue beating until stiff peaks form.
  3. Once the pie has set, spread the whipped cream layer evenly on top of the key lime filling, creating a fluffy, light layer.

Step 4: Assemble the Triple Decker Key Lime Pie

  1. After adding the whipped cream, garnish the pie with additional lime slices, zest, and a sprinkling of crumbled graham cracker crumbs for an extra touch of flavor and texture.
