Ingredients
- 1 sheet puff pastry (store-bought or homemade)
- 2 medium tomatoes, sliced
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 1 teaspoon dried oregano or fresh thyme (optional)
- Salt and pepper, to taste
- Fresh basil leaves (optional, for garnish)
- 1 egg (for egg wash, optional)
Instructions
Step 1: Prepare the Puff Pastry
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry sheet on a lightly floured surface. Cut the pastry into 4 squares or circles, depending on your preference for tartlet size. Place the pastry pieces on a baking sheet lined with parchment paper or a silicone mat.
- Using a fork, gently prick the center of each pastry square, leaving about 1-inch borders along the edges (this will help the crust rise evenly).
Step 2: Add the Cheese
- Sprinkle a small amount of Parmesan cheese evenly over the center of each puff pastry. Then, add a layer of shredded mozzarella on top. This forms the base for your tomato topping.
Step 3: Add the Tomatoes
- Arrange the tomato slices on top of the cheese in a single layer, slightly overlapping if necessary. Drizzle a little olive oil over the tomatoes and sprinkle with salt, pepper, and dried oregano or thyme (if using).
Step 4: Bake the Tartlets
- If you want a golden, shiny crust, you can brush the edges of the puff pastry with a beaten egg (egg wash) using a pastry brush. This step is optional but adds a nice finish to the tartlets.
- Bake the tartlets in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown, and the cheese is melted and bubbly.
Step 5: Garnish and Serve
- Once out of the oven, allow the tartlets to cool for a few minutes before serving.
- Garnish with fresh basil leaves for an extra burst of flavor and color.
Notes
- Use Fresh Tomatoes: Fresh, ripe tomatoes are key to this recipe. Try to avoid watery or overripe tomatoes that might make the pastry soggy.
- Add Extra Flavor: You can add a little balsamic glaze over the top for a tangy finish or sprinkle some garlic powder or red pepper flakes for an extra kick.
- Make Ahead: You can prepare the tartlets ahead of time and refrigerate them (before baking). Just bake them fresh when you’re ready to serve.
