  • 2 medium tomatoes, sliced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano or fresh thyme (optional)
  • Salt and pepper, to taste
  • Fresh basil leaves (optional, for garnish)
  • 1 egg (for egg wash, optional)

Instructions

Step 1: Prepare the Puff Pastry

  • Preheat the oven to 400°F (200°C).
  • Roll out the puff pastry sheet on a lightly floured surface. Cut the pastry into 4 squares or circles, depending on your preference for tartlet size. Place the pastry pieces on a baking sheet lined with parchment paper or a silicone mat.
  • Using a fork, gently prick the center of each pastry square, leaving about 1-inch borders along the edges (this will help the crust rise evenly).

Step 2: Add the Cheese

  • Sprinkle a small amount of Parmesan cheese evenly over the center of each puff pastry. Then, add a layer of shredded mozzarella on top. This forms the base for your tomato topping.

Step 3: Add the Tomatoes

  • Arrange the tomato slices on top of the cheese in a single layer, slightly overlapping if necessary. Drizzle a little olive oil over the tomatoes and sprinkle with salt, pepper, and dried oregano or thyme (if using).

Step 4: Bake the Tartlets

  • If you want a golden, shiny crust, you can brush the edges of the puff pastry with a beaten egg (egg wash) using a pastry brush. This step is optional but adds a nice finish to the tartlets.
  • Bake the tartlets in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown, and the cheese is melted and bubbly.

Step 5: Garnish and Serve

 

  • Once out of the oven, allow the tartlets to cool for a few minutes before serving.
  • Garnish with fresh basil leaves for an extra burst of flavor and color.
