  • 1 pre-baked deep dish pie shell
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 3/4 cup mayonnaise
  • 2 tbsp shredded Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Prepare the tomatoes by placing the sliced Roma tomatoes in a colander, sprinkling with salt, and allowing them to drain for about 10 minutes. Pat dry gently with paper towels.
  2. Layer the drained tomato slices in the pre-baked pie shell. Top with chopped basil and red onion, seasoning with salt and pepper.
  3. In a mixing bowl, combine mozzarella, cheddar cheese, and mayonnaise until well mixed. Spread this cheesy mixture over the tomato layer and sprinkle Parmesan on top.
