- 1 cup Dole crushed pineapple (not drained!) {use the pineapple in JUICE not syrup}
- ½ cup softened butter (for frosting)
- 8 ounces cream cheese (softened)
- 1 teaspoon vanilla (for frosting)
- 1 pound powdered sugar (for frosting)
- toasted pecans or coconut (optional topping)
Instructions
- Preheat your oven to 350°F.
- In a large bowl, mix unsweetened applesauce, granulated sugar, and eggs until well combined.
- Add flour, baking soda, baking powder, salt, and cinnamon to the wet ingredients and stir until just mixed.
- Fold in grated carrots, crushed pineapple (with juice), vanilla extract, and optional nuts or coconut.
- Pour batter into greased baking pan(s) and bake: 35-40 minutes for a 9×13 inch pan or 25-30 minutes for smaller pans.
