  • 1 cup Dole crushed pineapple (not drained!) {use the pineapple in JUICE not syrup}
  • ½ cup softened butter (for frosting)
  • 8 ounces cream cheese (softened)
  • 1 teaspoon vanilla (for frosting)
  • 1 pound powdered sugar (for frosting)
  • toasted pecans or coconut (optional topping)

Instructions

  1. Preheat your oven to 350°F.
  2. In a large bowl, mix unsweetened applesauce, granulated sugar, and eggs until well combined.
  3. Add flour, baking soda, baking powder, salt, and cinnamon to the wet ingredients and stir until just mixed.
  4. Fold in grated carrots, crushed pineapple (with juice), vanilla extract, and optional nuts or coconut.
  5. Pour batter into greased baking pan(s) and bake: 35-40 minutes for a 9×13 inch pan or 25-30 minutes for smaller pans.
  6. Cool in the pan for 10 minutes before transferring to a cooling rack.
