  • ½ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon almond extract
  • 2 ¼ cups all-purpose flour
  • 3 tablespoons granulated sugar (for rolling)
  • ½ cup raspberry and/or apricot jam (or your favorite flavor)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Add the egg yolk, vanilla extract, salt, and almond extract; mix until well combined.
  4. Gradually incorporate the all-purpose flour on low speed until the dough is firm.
  5. Roll tablespoon-sized portions of dough into balls, then roll each ball in sugar before placing them on prepared baking sheets.
  6. Use the back of a teaspoon measuring spoon to create a well in each cookie ball; fill with jam.
  7. Bake for 10-11 minutes or until lightly golden on the bottom. Allow cooling before transferring to a wire rack.
