  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 1/4 cups sugar (plus 1 tbsp for topping)
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line two muffin pans.
  2. In a small bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In a stand mixer bowl, combine pumpkin puree, vegetable oil, eggs, and sugar; mix on low until well blended.
  4. Gradually add dry ingredients and mix until just combined; avoid overmixing.
  5. In a separate bowl, mix cinnamon and remaining sugar for topping.
  6. Fill muffin cups two-thirds full with batter and sprinkle with cinnamon sugar.
  7. Bake for 20-25 minutes or until golden brown; a toothpick should come out clean.
  8. Cool in the pan for five minutes before transferring to wire racks.
