- 1 1/4 cups sugar (plus 1 tbsp for topping)
- 1 tsp cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line two muffin pans.
- In a small bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
- In a stand mixer bowl, combine pumpkin puree, vegetable oil, eggs, and sugar; mix on low until well blended.
- Gradually add dry ingredients and mix until just combined; avoid overmixing.
- In a separate bowl, mix cinnamon and remaining sugar for topping.
- Fill muffin cups two-thirds full with batter and sprinkle with cinnamon sugar.
- Bake for 20-25 minutes or until golden brown; a toothpick should come out clean.
- Cool in the pan for five minutes before transferring to wire racks.
