  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground all-spice
  • 1/4 teaspoon ground ginger
  • Juice from 1/2 lemon (about 2 teaspoons)

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Sauté chopped onions, garlic, carrots, and celery until onions are translucent (about 5–6 minutes).
  3. Stir in lentils, diced tomatoes, broth, and spices; bring to a boil.
  4. Reduce heat to low, cover, and simmer for 30–35 minutes or until lentils are tender. Season with salt and additional pepper as desired.
  5. For a creamier texture, blend part of the soup using an immersion blender or regular blender before returning it to the pot.
