Ingredients
For the Stir-Fry:

1 lb boneless, skinless chicken breasts or thighs, thinly sliced

2 cups broccoli florets

1 red bell pepper, sliced

1 carrot, julienned or thinly sliced

2 cloves garlic, minced

1 tbsp vegetable oil

½ tsp salt

¼ tsp black pepper
For the Peanut Sauce:

⅓ cup creamy peanut butter

2 tbsp soy sauce or tamari

1 tbsp hoisin sauce

1 tbsp honey or maple syrup

1 tbsp rice vinegar or lime juice

1–2 tsp sriracha (optional for heat)

⅓ cup warm water (more if needed for thinning)
For Garnish:

2 tbsp chopped peanuts

2 tbsp chopped cilantro

Lime wedges
Optional Add-ins:

½ cup snap peas, mushrooms, or zucchini

Instructions
Step 1: Make the Peanut Sauce
In a small bowl, whisk together the peanut butter, soy sauce, hoisin sauce, honey, rice vinegar, sriracha (if using), and warm water.
Adjust consistency by adding a little more water if needed. Set aside.
Step 2: Cook the Chicken
Heat vegetable oil in a large skillet or wok over medium-high heat.
Season the sliced chicken with salt and pepper.
Add to the skillet and cook for 5–7 minutes, stirring occasionally, until browned and cooked through.
Remove chicken from the skillet and set aside.
Step 3: Stir-Fry the Vegetables
In the same skillet, add the broccoli, bell pepper, and carrots.
Stir-fry for 3–4 minutes until just tender but still crisp.
Add the minced garlic and cook for another 30 seconds.
Step 4: Combine Everything
Return the cooked chicken to the skillet.
Pour the peanut sauce over the chicken and veggies.
Toss everything together and cook for 2–3 minutes, until everything is well coated and heated through.
Step 5: Serve
Serve immediately, garnished with chopped peanuts, cilantro, and lime wedges.
