  • 1 pound lean ground beef
  • ½ yellow onion (diced)
  • 1 teaspoon minced garlic
  • 1 packet taco seasoning
  • 12 ounces frozen corn
  • 14.5 ounces petite diced tomatoes with green chilies (not drained)
  • 1 cup sour cream
  • 3 cups Mexican blend cheese
  • 2 cups finely crushed Doritos
  • Optional: black beans, diced tomatoes, shredded lettuce, avocado, sliced green onions

Instructions

  1. Preheat your oven to 350°F.
  2. Spray a 9×13 baking dish with nonstick spray.
  3. In a large skillet, cook the ground beef and diced onion over medium heat until fully cooked; drain excess grease.
  4. Add minced garlic and cook for one more minute.
  5. Stir in frozen corn, taco seasoning, diced tomatoes, and two cups of finely crushed Doritos. If desired, add black beans.
  6. Remove from heat and mix in sour cream and two cups of cheese until combined.
  7. Pour the mixture into the greased baking dish; bake for about five minutes until warmed through.
  8. Sprinkle remaining cheese and one cup of loosely crushed Doritos on top; bake for another five minutes until cheese melts.
  9. Serve warm garnished with optional toppings.
