Ingredients
- 1 pound lean ground beef
- ½ yellow onion (diced)
- 1 teaspoon minced garlic
- 1 packet taco seasoning
- 12 ounces frozen corn
- 14.5 ounces petite diced tomatoes with green chilies (not drained)
- 1 cup sour cream
- 3 cups Mexican blend cheese
- 2 cups finely crushed Doritos
- Optional: black beans, diced tomatoes, shredded lettuce, avocado, sliced green onions
Instructions
- Preheat your oven to 350°F.
- Spray a 9×13 baking dish with nonstick spray.
- In a large skillet, cook the ground beef and diced onion over medium heat until fully cooked; drain excess grease.
- Add minced garlic and cook for one more minute.
- Stir in frozen corn, taco seasoning, diced tomatoes, and two cups of finely crushed Doritos. If desired, add black beans.
- Remove from heat and mix in sour cream and two cups of cheese until combined.
- Pour the mixture into the greased baking dish; bake for about five minutes until warmed through.
- Sprinkle remaining cheese and one cup of loosely crushed Doritos on top; bake for another five minutes until cheese melts.
- Serve warm garnished with optional toppings.
