Ingredients
For the Pancakes:
1 cup mashed cooked sweet potato (about 1 medium)
2 large eggs
¾ cup milk (dairy or non-dairy)
1 tsp vanilla extract
1 tbsp maple syrup or honey (optional)
1 cup whole wheat flour (or all-purpose flour)
1½ tsp baking powder
½ tsp baking soda
½ tsp cinnamon
¼ tsp nutmeg
¼ tsp salt
Butter or oil for greasing the pan

Instructions
Step 1: Prepare the Sweet Potato
Cook and mash one medium sweet potato (roasted or boiled).
Let it cool slightly before mixing into the batter.
Step 2: Mix Wet Ingredients
In a large bowl, whisk together mashed sweet potato, eggs, milk, vanilla extract, and maple syrup until smooth and well blended.
Step 3: Add Dry Ingredients
In a separate bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually add dry ingredients to the wet mixture.
Stir until just combined—do not overmix.
Step 4: Preheat and Grease the Pan
Heat a griddle or non-stick skillet over medium heat.
Lightly grease with butter or oil.
Step 5: Cook the Pancakes
Pour about ¼ cup of batter for each pancake onto the hot surface.
Cook for 2–3 minutes until bubbles form on top and edges look set.
Flip and cook for another 2–3 minutes until golden and cooked through.
