This easy-to-make meal is ideal for busy weeknights or when you’re craving something both comforting and refreshing.
Ingredients
- 2 chicken breasts, boneless and skinless, cut into bite-sized cubes
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 cup long-grain white rice (or jasmine rice)
- 1 cup pineapple chunks (fresh or canned, drained)
- 1/2 cup pineapple juice (if using canned pineapple)
- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger (or 1/2 teaspoon ground ginger)
- 2 cloves garlic, minced
- 1/4 cup green onions, chopped (for garnish)
- 1 tablespoon sesame seeds (optional, for garnish)
Instructions
Step 1: Cook the Rice
- Cook the rice according to the package instructions (using a rice cooker or stovetop). Set aside once cooked.
Step 2: Cook the Chicken
- Heat the olive oil in a large skillet or frying pan over medium heat. Season the chicken cubes with salt and pepper.
- Add the chicken to the skillet and cook for about 6-7 minutes, or until golden brown and cooked through, stirring occasionally. Remove the chicken from the skillet and set aside.
Step 3: Make the Sauce
- In the same skillet, add the minced garlic and grated ginger. Cook for 1-2 minutes, or until fragrant.
- Stir in the soy sauce, pineapple juice, honey, and rice vinegar. Bring the mixture to a simmer and cook for 2-3 minutes, allowing the sauce to reduce slightly.
Step 4: Add Pineapple
- Add the pineapple chunks to the skillet, stirring to combine with the sauce. Cook for another 2-3 minutes until the pineapple is heated through and the sauce thickens.
Step 5: Combine Chicken and Rice
- Return the cooked chicken to the skillet and stir to coat the chicken in the sauce.
- Add the cooked rice to the skillet and toss everything together, ensuring the rice is evenly coated in the sweet and savory sauce.
Step 6: Garnish and Serve
- Garnish with chopped green onions and sesame seeds (if using).
- Serve immediately and enjoy!
Notes
- Use Fresh Pineapple: Fresh pineapple gives the dish a bright, refreshing flavor, but canned pineapple works just as well. Just make sure to drain it if using canned.
- Adjust the Sweetness: You can adjust the sweetness of the dish by adding more or less honey, depending on your preference.
- Make It Spicy: If you like a bit of heat, add a pinch of red pepper flakes or a dash of sriracha to the sauce for a spicy kick.
- Leftovers: This dish makes great leftovers and can be stored in an airtight container in the fridge for up to 2 days. Reheat it in the microwave or on the stovetop before serving.
