Instructions
Step 1: Cook the Ground Beef
-
In a large pot over medium heat, brown the ground beef until fully cooked.
-
Drain excess fat and set the beef aside in a bowl.
Step 2: Sauté the Aromatics and Vegetables
-
In the same pot, sauté onion, garlic, carrots, and celery for 4–5 minutes until softened.
-
Stir in the diced potatoes, broth, salt, pepper, paprika, and thyme.
-
Bring to a boil, then reduce heat and simmer for 10–12 minutes or until potatoes are tender.
Step 3: Make the Roux
-
In a separate small saucepan, melt the butter over medium heat.
-
Whisk in the flour and cook for 1–2 minutes until lightly golden.
-
Slowly whisk in the milk and cook until thickened, about 3–4 minutes.
Step 4: Combine and Simmer
-
Return the cooked beef to the pot with the vegetables.
-
Stir in the thickened milk mixture until fully combined.
-
Add the shredded cheddar cheese and stir until melted and smooth.
-
Stir in the sour cream for added richness.
-
Simmer on low for another 5–10 minutes, stirring occasionally.
Step 5: Serve and Garnish
-
Ladle into bowls and top with green onions, beef bacon crumbles, or extra cheese.
-
Serve with warm crusty bread or toasted hamburger buns.
Notes
Use Sharp Cheddar – For bold cheesy flavor that melts well.
Don’t Overcook Potatoes – Keep them tender but not mushy.
Add Extra Flavor – A splash of Worcestershire sauce or hot sauce gives a burger-like boost.
For Creamier Texture – Mash a few potatoes in the pot.
Make it Gluten-Free – Use cornstarch slurry instead of flour for thickening.
