For the Chicken:

  • 4 boneless, skinless chicken breasts

  • 1 tbsp olive oil (for searing)

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp paprika

For the Stuffing:

  • ½ cup crumbled feta cheese

  • ¼ cup sun-dried tomatoes (packed in oil), finely chopped

  • 2 tbsp cream cheese, softened

  • 2 cloves garlic, minced

  • 1 tbsp chopped fresh basil or parsley

  • Optional: ½ cup chopped fresh spinach or 1 tbsp chopped olives


Instructions

Step 1: Preheat and Prep

  1. Preheat oven to 375°F (190°C).

  2. Lightly grease a baking dish and set aside.

Step 2: Make the Stuffing

  1. In a bowl, mix feta, sun-dried tomatoes, cream cheese, garlic, and fresh herbs.

  2. Stir until creamy and well combined.

  3. Optional: Fold in spinach or olives for added flavor.

Step 3: Prepare the Chicken

  1. Use a sharp knife to cut a deep pocket in the side of each chicken breast (be careful not to slice all the way through).

  2. Stuff each pocket generously with the tomato-feta mixture.

  3. Secure with toothpicks if needed to keep the filling inside.

Step 4: Season and Sear

  1. Rub the outside of each stuffed breast with olive oil.

  2. Season both sides with salt, pepper, garlic powder, and paprika.

  3. Heat a skillet over medium-high heat and sear the chicken for 2–3 minutes per side until golden.

Step 5: Bake the Chicken

  1. Transfer the seared chicken breasts to the baking dish.

  2. Bake uncovered for 20–25 minutes, or until internal temperature reaches 165°F (74°C).

  3. Let rest for 5 minutes before slicing.

Step 6: Garnish and Serve

  1. Remove toothpicks and sprinkle with extra herbs or crumbled feta.

  2. Serve with a side of roasted vegetables, salad, or rice.
