  • 1 Egg yolk (room temperature)
  • 1/3 cup Christmas sprinkles (jimmies)
  • 1 1/2 cups All-purpose flour (for cookie dough balls)
  • 1/2 tsp Salt (for cookie dough balls)
  • 1/2 cup Unsalted butter (room temperature, for cookie dough balls)
  • 1 cup Regenerative Organic Certified® Cane Sugar from Wholesome (for cookie dough balls)
  • 1 tsp Pure vanilla extract (for cookie dough balls)
  • 5 TBSP Milk (for cookie dough balls)
  • 1/3 cup Christmas sprinkles (jimmies, for cookie dough balls)
  • 32 oz Cream cheese (room temperature)
  • 2/3 cup Regenerative Organic Certified® Cane Sugar from Wholesome (for cheesecake filling)
  • 3/4 cup Sour cream (room temperature or Greek yogurt)
  • 1/2 cup Heavy cream (room temperature)
  • 1 tsp Pure vanilla extract (for cheesecake filling)
  • 4 Large eggs (room temperature)
  • 2/3 Cookie dough balls (for cheesecake filling)
  • 1 cup White chocolate chips (for ganache)
  • 1/3 cup Heavy cream (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a springform pan by greasing it.
  2. For the crust: Mix flour, baking soda, and salt in one bowl. In another bowl, cream butter and sugar until fluffy; add vanilla, egg, and yolk. Combine dry ingredients and fold in sprinkles. Press mixture into the bottom of the pan.
  3. For cookie dough balls: Combine flour and salt; cream butter and sugar until light; mix in vanilla and milk. Add dry ingredients and fold in sprinkles. Chill while preparing cheesecake filling.
  4. For cheesecake filling: Beat cream cheese until smooth; gradually add sugar, then blend in sour cream, heavy cream, and vanilla. Mix in eggs one at a time.
  5. Assemble: Pour half of the filling over the crust, drop spoonfuls of cookie dough balls on top, then cover with remaining filling.
  6. Bake for approximately 80 minutes until slightly jiggly in the center. Cool gradually in the oven for an hour before refrigerating for at least four hours or overnight.
  7. Prepare ganache by warming heavy cream and pouring it over white chocolate chips; stir until smooth.
  8. Pour ganache over chilled cheesecake before serving.
