  • 2 medium delicata squash
  • olive oil
  • ¾ cup uncooked quinoa (rinsed well)
  • ½ cup chopped red onion
  • 1 clove garlic (minced)
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 8-ounce can tomato sauce
  • 15-ounce can black beans (rinsed and drained)
  • ¼ cup fresh cilantro
  • 1 cup grated cheddar cheese
  • additional cilantro or cheddar cheese for serving (if desired)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve the delicata squash lengthwise, scoop out the seeds, and brush the insides with olive oil; season with salt and pepper.
  3. In a medium saucepan, cook rinsed quinoa in 1.5 cups water until fluffy (about 15 minutes).
  4. Sauté chopped red onion in olive oil until translucent; add minced garlic, chili powder, and cumin.
  5. In a bowl, combine cooked quinoa, sautéed onion mixture, tomato sauce, black beans, cilantro, and half of the cheddar cheese.
  6. Generously stuff each squash half with the mixture and top with remaining cheese.
  7. Place stuffed squash in a baking dish and bake for about 30 minutes until tender.
