  • 2 pounds thinly sliced beef
  • Taco seasoning
  • Red and green bell peppers
  • Sweet onion
  • Minced garlic
  • Shredded Colby Jack cheese
  • Flour tortillas
  • Salsa
  • Guacamole
  • Sour cream
  • Cilantro
  • Lime

Instructions

  1. Heat olive oil in a large skillet and sauté sliced bell peppers and onion until translucent. Add minced garlic; cook until fragrant.
  2. In the same skillet, heat more olive oil and sauté the beef until cooked through. Stir in taco seasoning and water; mix well before adding sautéed veggies.
  3. Place a tortilla in another skillet over medium heat. Add a portion of the beef mixture and cheese on one side, then fold the tortilla.
  4. Cook until golden brown on both sides and the cheese has melted.
  5. Repeat with remaining ingredients and serve sliced with salsa, guacamole, sour cream, cilantro, and lime wedges.
