Ingredients
- 12 lasagna noodles
- 10 ounces frozen chopped spinach
- 1 egg
- 15 ounces ricotta cheese
- 8 ounces shredded mozzarella cheese (divided)
- ½ cup grated Parmesan cheese
- 25-ounce jar marinara sauce
- Salt and black pepper
Instructions
- Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on parchment paper to cool.
- Thaw the spinach and squeeze out excess moisture using a clean kitchen towel.
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the egg, spinach, ricotta cheese, 7 ounces of mozzarella, Parmesan cheese, salt, and pepper.
- Spread 1 cup of marinara sauce in the bottom of a baking dish. Fill each noodle with about ¼ cup of the cheese mixture, roll them up, and place seam-side down in the dish.
- Top with remaining marinara sauce and sprinkle with remaining mozzarella cheese. Cover with foil and bake for 30 minutes; then uncover and bake for an additional 5-10 minutes until the cheese is bubbly.
