  • 12 lasagna noodles
  • 10 ounces frozen chopped spinach
  • 1 egg
  • 15 ounces ricotta cheese
  • 8 ounces shredded mozzarella cheese (divided)
  • ½ cup grated Parmesan cheese
  • 25-ounce jar marinara sauce
  • Salt and black pepper

Instructions

  1. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on parchment paper to cool.
  2. Thaw the spinach and squeeze out excess moisture using a clean kitchen towel.
  3. Preheat your oven to 350°F (175°C).
  4. In a mixing bowl, combine the egg, spinach, ricotta cheese, 7 ounces of mozzarella, Parmesan cheese, salt, and pepper.
  5. Spread 1 cup of marinara sauce in the bottom of a baking dish. Fill each noodle with about ¼ cup of the cheese mixture, roll them up, and place seam-side down in the dish.
  6. Top with remaining marinara sauce and sprinkle with remaining mozzarella cheese. Cover with foil and bake for 30 minutes; then uncover and bake for an additional 5-10 minutes until the cheese is bubbly.
