  • 1 tablespoon butter – For cooking the omelette.
  • Salt & pepper – To taste.
  • Optional: Fresh herbs (such as chives or parsley) for garnish.

Instructions

Step 1: Prepare the Spinach
In a medium-sized skillet, melt a little butter over medium heat. Add the spinach and sauté for 1-2 minutes until wilted. Remove from the pan and set aside.

Step 2: Beat the Eggs
Crack the eggs into a bowl, season with a pinch of salt and pepper, and whisk until the eggs are fully blended and slightly frothy.

Step 3: Cook the Omelette
In the same skillet, melt the remaining butter over medium heat. Pour in the beaten eggs and cook without stirring, allowing the edges to set and the middle to remain slightly runny.

Step 4: Add the Spinach & Cheese
Once the omelette is mostly set but still slightly runny in the center, add the sautéed spinach and sprinkle the shredded cheese evenly on top.

Step 5: Fold & Finish Cooking
Use a spatula to gently fold one side of the omelette over the filling, then cook for another 1-2 minutes, until the cheese melts and the eggs are fully cooked. If you like a more well-done omelette, cook for a bit longer.

Step 6: Serve
Gently slide the omelette onto a plate and garnish with fresh herbs if desired. Serve immediately and enjoy!

Notes

Don’t Overcook the Eggs – The key to a perfect omelette is to avoid overcooking the eggs. Keep the center slightly runny for a soft, fluffy texture.
Use Fresh Spinach – Fresh spinach gives a nice texture and flavor. You can also use frozen spinach, but be sure to drain it thoroughly to avoid excess moisture.
