Ingredients
For the Filling:

1 cup frozen chopped spinach, thawed and squeezed dry

½ cup crumbled feta cheese

¼ cup cream cheese, softened

1 clove garlic, minced

1 egg yolk (save the white for brushing)

¼ tsp ground black pepper

¼ tsp salt (optional, based on feta’s saltiness)

Pinch of nutmeg (optional)
For the Pastry:

1 sheet puff pastry, thawed (from a 17 oz package)

1 egg white, beaten (for egg wash)

1 tbsp sesame seeds or poppy seeds (optional topping)
Instructions
Step 1: Prepare the Filling
In a mixing bowl, combine spinach, feta, cream cheese, minced garlic, egg yolk, pepper, and nutmeg.
Mix until smooth and fully incorporated.
Step 2: Prep the Puff Pastry
Unfold the puff pastry on a lightly floured surface.
Roll it gently to even out the thickness.
Cut the sheet in half to make two rectangles of equal size.
Step 3: Fill and Assemble
Spread the spinach and feta mixture evenly over one rectangle of puff pastry.
Place the second rectangle on top to sandwich the filling.
Press lightly to seal.
Step 4: Cut and Twist
Using a knife or pizza cutter, slice the pastry into 1-inch wide strips.
Twist each strip gently several times and place them on a parchment-lined baking sheet.
Step 5: Egg Wash and Bake
Brush each twist with beaten egg white.
Sprinkle with sesame or poppy seeds if desired.
Bake at 400°F (200°C) for 18–22 minutes, or until golden brown and puffed.
Step 6: Serve Warm or Cool
Let the twists cool slightly before serving.
Enjoy warm, or at room temperature—they’re delicious either way.
