Ingredients
For the Foil Packs:

1 lb large shrimp (peeled and deveined)

1 cup fresh pineapple chunks

1 red bell pepper (sliced)

1 yellow bell pepper (sliced)

1 small red onion (sliced)

1 zucchini (sliced)

1 tbsp olive oil

For the Spicy Sauce:

¼ cup sweet chili sauce

2 tbsp soy sauce

1 tbsp honey

1 tbsp sriracha (adjust to taste)

1 clove garlic (minced)

1 tsp fresh ginger (grated)
For Garnish:

2 tbsp fresh cilantro (chopped)

1 lime (cut into wedges)

Instructions
Step 1: Preheat the Grill or Oven
If grilling, preheat the grill to medium-high heat.
If baking, preheat your oven to 400°F (200°C).
Step 2: Make the Spicy Sauce
In a small bowl, whisk together sweet chili sauce, soy sauce, honey, sriracha, garlic, and ginger until smooth.
Set aside.
Step 3: Prepare the Ingredients
In a large bowl, toss the shrimp, pineapple chunks, bell peppers, onion, and zucchini with olive oil, salt, and black pepper.
Pour the spicy sauce over the shrimp and vegetables.
Gently toss to coat everything evenly.
Step 4: Assemble the Foil Packs
Cut four large sheets of heavy-duty aluminum foil.
Divide the shrimp and vegetable mixture evenly among the sheets.
Fold the sides of the foil over the shrimp mixture, sealing the packets completely.
Step 5: Cook the Foil Packs
Grill: Place foil packs on the grill and cook for 8-10 minutes, turning once halfway through, until shrimp are pink and cooked through.
Oven: Place foil packs on a baking sheet and bake for 12-14 minutes.
Step 6: Garnish and Serve
Carefully open the foil packs (watch for steam).
Sprinkle with chopped cilantro and sesame seeds if using.
Serve with lime wedges for a fresh squeeze of flavor.
Notes
Use Heavy-Duty Foil – It prevents tearing and holds up better on the grill.
