Ingredients

Scale
  • 6 large eggs

  • 3 tbsp mayonnaise

  • 1 tsp Dijon mustard

  • 1½ tsp chili garlic sauce (adjust to taste)

  • ½ tsp garlic powder

  • ½ tsp white vinegar or lemon juice

  • Salt and black pepper, to taste

  • Optional: ¼ tsp smoked paprika

For Garnish:

  • Thinly sliced red chili or jalapeño

  • Chopped chives or green onions

  • Sprinkle of chili flakes or smoked paprika

  • Drizzle of chili oil (optional)


Instructions

Step 1: Hard Boil the Eggs

  1. Place eggs in a saucepan and cover with cold water.

  2. Bring to a boil, then reduce to a simmer for 10 minutes.

  3. Transfer eggs to a bowl of ice water and cool completely (about 10 minutes).

  4. Peel and slice the eggs in half lengthwise.

Step 2: Make the Filling
5. Gently remove yolks and place them in a mixing bowl.
6. Mash with a fork or blend using a food processor for a smoother texture.
7. Add mayo, mustard, chili garlic sauce, garlic powder, vinegar or lemon juice, salt, and pepper.
8. Mix until creamy and well combined. Taste and adjust spice level.

Step 3: Fill the Egg Whites
9. Spoon or pipe the filling into the egg white halves.
10. Smooth tops or swirl for a pretty presentation.

 

Step 4: Garnish & Serve
11. Top with chili slices, chives, chili flakes, or a drizzle of chili oil if you want to turn up the heat.
12. Serve chilled or at room temperature.

Notes

Start with Older Eggs – They peel more easily than super fresh ones.
Chill Filling – Cold filling pipes more cleanly.
Use a Food Processor – For the smoothest, most luxurious texture.
Adjust Heat – Use more or less chili garlic sauce depending on your spice preference.
