  • 3 teaspoons vanilla paste (or extract)
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice (or cinnamon)
  • 1/3 cup brown sugar (for frosting)
  • 3 1/4 cups powdered sugar

Instructions

  1. Cream the softened vegan butter, pumpkin puree, brown sugar, granulated sugar, and vanilla until fluffy.
  2. In another bowl, whisk together flour, baking powder, pumpkin pie spice, cornstarch, and salt.
  3. Gradually combine wet and dry ingredients on low speed until just mixed.
  4. Chill the dough for at least 30 minutes.
  5. Preheat oven to 350°F (177°C).
  6. Scoop dough into balls and flatten slightly on a parchment-lined baking sheet.
  7. Bake for 10–12 minutes until lightly golden and cool completely on the sheet.
  8. For frosting, mix all ingredients until smooth. Pipe onto cooled cookies.
