For the Beef:

  • 23 lbs beef chuck roast

  • 1 tbsp olive oil

  • 1 cup beef broth

  • 1 tbsp Worcestershire sauce

  • 1 tbsp soy sauce

  • 1 tbsp tomato paste

  • 1 tbsp brown sugar

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp smoked paprika

  • ½ tsp black pepper

  • ½ tsp salt

For the Cheddar Sauce:

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 1 cup milk (preferably whole)

  • 1 ½ cups shredded sharp cheddar cheese

  • ¼ tsp salt

  • ¼ tsp garlic powder

  • Pinch of cayenne (optional)

For Serving:

  • 6 sandwich rolls or hamburger buns

  • Pickles, caramelized onions, or coleslaw (optional toppings)


Instructions

Step 1: Sear the Beef (Optional but Recommended)
Heat olive oil in a skillet over medium-high heat.
Sear the beef roast on all sides until browned, about 2–3 minutes per side.
Transfer to the slow cooker.

Step 2: Prepare the Cooking Liquid
In a small bowl, whisk together beef broth, Worcestershire sauce, soy sauce, tomato paste, brown sugar, and all the seasonings.
Pour the mixture over the beef in the slow cooker.

Step 3: Slow Cook the Beef
Cover and cook on low for 8 hours or high for 4–5 hours, until the beef is very tender and shreds easily with a fork.

Step 4: Shred the Beef
Remove the beef from the slow cooker and shred it using two forks.
Return the shredded beef to the juices in the slow cooker to stay warm and soak up the flavor.

Step 5: Make the Cheddar Sauce
In a medium saucepan, melt butter over medium heat.
Whisk in flour and cook for 1–2 minutes to create a roux.
Slowly add milk, whisking constantly until smooth and thickened, about 3–4 minutes.
Reduce heat and stir in shredded cheddar cheese, salt, garlic powder, and cayenne.
Stir until the cheese is fully melted and the sauce is smooth.

 

Step 6: Assemble the Sandwiches
Toast sandwich rolls if desired.
Pile the shredded beef generously onto each bun.
Spoon warm cheddar sauce over the beef.
Add optional toppings like pickles, caramelized onions, or coleslaw.
