- 1 cup matchstick carrots

- 3 garlic cloves, minced
- 1/2 cup low sodium soy sauce
- 1/2 cup brown sugar
- 1 3/4 cups beef stock
- 2 packets dry ramen noodles
- Sesame seeds (for garnish)
Instructions
- In a skillet over medium-high heat, brown the ground beef while breaking it apart with a wooden spoon. Add minced garlic and cook until fragrant.
- Transfer the browned beef and garlic to a slow cooker. Stir in matchstick carrots, sliced red bell pepper, and chopped green onions (set some aside for garnish).
- In a bowl, mix low sodium soy sauce, brown sugar, and beef stock. Pour over the meat and vegetable mixture; stir to combine.
- Cook on low for 4 to 6 hours. About 30 minutes before serving, add dry ramen noodles directly into the slow cooker ensuring they’re submerged in the sauce.
- Continue cooking on low for another 30 minutes until noodles are soft. Stir gently before serving.
- Serve in bowls garnished with sesame seeds and reserved green onions.
