  • 1 cup matchstick carrots
  • 1 red bell pepper, sliced
  • 23 green onions, chopped (reserve some for garnish)
  • 3 garlic cloves, minced
  • 1/2 cup low sodium soy sauce
  • 1/2 cup brown sugar
  • 1 3/4 cups beef stock
  • 2 packets dry ramen noodles
  • Sesame seeds (for garnish)

Instructions

  1. In a skillet over medium-high heat, brown the ground beef while breaking it apart with a wooden spoon. Add minced garlic and cook until fragrant.
  2. Transfer the browned beef and garlic to a slow cooker. Stir in matchstick carrots, sliced red bell pepper, and chopped green onions (set some aside for garnish).
  3. In a bowl, mix low sodium soy sauce, brown sugar, and beef stock. Pour over the meat and vegetable mixture; stir to combine.
  4. Cook on low for 4 to 6 hours. About 30 minutes before serving, add dry ramen noodles directly into the slow cooker ensuring they’re submerged in the sauce.
  5. Continue cooking on low for another 30 minutes until noodles are soft. Stir gently before serving.
  6. Serve in bowls garnished with sesame seeds and reserved green onions.
