  • 2 packs udon noodles
  • Chinese cabbage (or any leafy greens)
  • 1 tbsp garlic, minced
  • 1 white onion, sliced
  • 200 g fresh beef, thinly sliced
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 3 tbsp dark soy sauce
  • 2 tsp fresh ground black pepper

Instructions

  1. Marinate the beef by combining minced garlic, sesame oil, soy sauce, oyster sauce, Chinese rice vinegar, and cornstarch slurry in a mixing bowl. Coat the beef and let sit for 10 minutes.
  2. Boil water in a large pot; add udon noodles and cook for 1–2 minutes until slightly loosened. Drain and set aside.
  3. Mix remaining marinade with dark soy sauce, black pepper, water, and potato starch in a small bowl to create the sauce.
  4. Heat oil in a wok over medium heat; stir-fry garlic and onion until soft. Add marinated beef and cook until browned.
  5. Pour in the prepared sauce; stir until thickened. Combine cooked udon noodles and Chinese cabbage; toss to coat evenly. Serve hot.
