  • 1 pound medium shrimp (peeled and cleaned)
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp ground cumin
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • 10 jalapeños (halved and cleaned)
  • 8 oz cream cheese (softened)
  • 4 oz sharp cheddar cheese (grated)
  • ½ cup breadcrumbs (topping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine shrimp with olive oil, chili powder, garlic powder, cumin, salt, and pepper. Mix well.
  3. Sauté the seasoned shrimp in a large skillet over medium-high heat for about 2-3 minutes per side until cooked through. Chop roughly into small pieces.
  4. In another bowl, mix chopped shrimp with softened cream cheese and grated cheddar until well combined.
  5. Halve each jalapeño lengthwise and remove seeds carefully.
  6. Generously fill each jalapeño half with the shrimp-cheese mixture and sprinkle breadcrumbs on top.
  7. Arrange on a baking sheet lined with parchment paper and bake for 20-25 minutes until golden brown.
