- 2 tbsp olive oil
- 1 tsp chili powder
- ½ tsp garlic powder
- ½ tsp ground cumin
- ¼ tsp kosher salt
- ¼ tsp black pepper
- 10 jalapeños (halved and cleaned)
- 8 oz cream cheese (softened)
- 4 oz sharp cheddar cheese (grated)
- ½ cup breadcrumbs (topping)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine shrimp with olive oil, chili powder, garlic powder, cumin, salt, and pepper. Mix well.
- Sauté the seasoned shrimp in a large skillet over medium-high heat for about 2-3 minutes per side until cooked through. Chop roughly into small pieces.
- In another bowl, mix chopped shrimp with softened cream cheese and grated cheddar until well combined.
- Halve each jalapeño lengthwise and remove seeds carefully.
- Generously fill each jalapeño half with the shrimp-cheese mixture and sprinkle breadcrumbs on top.
- Arrange on a baking sheet lined with parchment paper and bake for 20-25 minutes until golden brown.
