- 1 pound large shrimp (peeled and deveined)
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 2 tablespoons sesame oil
- 1 small chopped white onion
- 1 cup frozen peas and carrots (thawed)
- 3 beaten eggs
- 3 cups cooked rice
- 3 tablespoons soy sauce (more or less to taste)
- 2 tablespoons chopped green onions
Instructions
- Preheat a large skillet or wok over medium heat. Add vegetable oil. Once hot, cook the shrimp seasoned with salt and pepper for about 3-5 minutes until pink. Remove from skillet.
- In the same skillet, sauté the chopped onion and peas and carrots for about 3-5 minutes until tender.
- Slide vegetables aside, pour in beaten eggs on the other side, and scramble until fully cooked.
- Increase heat to medium-high, add cooked rice and shrimp back into the pan, pour soy sauce and sesame oil over everything. Stir until heated through. Adjust seasoning if needed and garnish with green onions.
