- 4 medium russet potatoes
- 1 tablespoon olive oil
- 1 tablespoon kosher salt
- 2 tablespoons butter (divided)
- 1 pound raw medium shrimp (peeled and deveined)
- 1 tablespoon Cajun seasoning
- ½ teaspoon Old Bay seasoning
- 1 tablespoon minced garlic
- 2 cups heavy cream
- ½ cup Parmesan cheese (shredded)
- ½ cup Asiago cheese (shredded)
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 425°F.
- Rub potatoes with olive oil and sprinkle with salt. Bake on parchment-lined baking sheet for 50–60 minutes until fork-tender.
