  • 1 1/2 pounds lean ground beef or turkey

  • 2 large carrots (chopped small)

  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 tablespoons tomato paste
  • 2 1/2 cups low sodium beef or chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/2 cup frozen corn kernels
  • 1/2 cup frozen peas
  • 1 to 2 cups shredded sharp cheddar cheese

Instructions

  1. Preheat the oven to 400°F. Wrap each potato in aluminum foil after buttering it and seasoning it with salt and pepper. Bake for about an hour until tender.
  2. In a nonstick skillet over medium heat, cook the ground meat with onion, carrots, garlic, salt, and pepper until the meat is no longer pink.
  3. Stir in flour, then add tomato paste, broth, Worcestershire sauce, oregano, and thyme. Simmer until thickened.
  4. Mix in corn and peas; adjust seasoning as needed.
  5. Unwrap baked potatoes carefully, slice open and fluff the insides. Fill each potato generously with the meat mixture and top with cheese before serving.
