Ingredients
- 3 tbsp butter
- 1 lb small shrimp
- 6–8 oz lobster meat
- 1 cup chopped carrots
- 1 large celery stick (chopped)
- 1 shallot (minced)
- 5 cloves garlic (minced)
- 3 cups seafood stock
- 1 cup chicken stock
- 6 oz crab meat
- 1 box Cheddar Bay biscuits
- ½ cup shredded cheddar cheese
Instructions
- In a large pot over medium-low heat, melt butter and add shrimp and lobster. Cook until pink, then set aside.
- Sauté shallots, carrots, celery, thyme, and cayenne in the same pot until softened. Add garlic and cook for another two minutes.
- Stir in tomato paste and flour to form a paste. Gradually add seafood stock and chicken stock while mixing well.
- Add peas and corn; simmer on low heat for about 15 minutes.
- Mix in heavy cream along with the cooked seafood before dividing filling into ramekins.
- Top each ramekin with biscuit dough and bake at 375°F (190°C) for about 15–17 minutes or until golden brown.
