- 1 small onion (sliced)
- 5 cloves garlic (minced)
- 3 tablespoons tomato paste
- 150 ml white grape juice or chicken broth
- 2 cups tomato sauce
- 12 ounces mixed seafood
- 1/2 pound mussels
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons parsley (finely chopped)
Instructions
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a skillet over medium heat, add olive oil. Once hot, add sliced onion and cook until translucent. Stir in minced garlic and sauté for another 1-2 minutes.
- Add tomato paste to the skillet, stirring continuously for about two minutes.
- Pour in white grape juice or chicken broth, bring to a simmer, and allow to cook until strong odors dissipate.
- Stir in tomato sauce, salt, pepper, and half of the chopped parsley. Simmer for a few more minutes while adjusting seasoning as needed.
- Mix in the seafood medley and mussels; cook for about 3-5 minutes or until mussels open up.
- Combine cooked spaghetti with seafood sauce; toss well, adding reserved pasta water if needed.
