  • 1 pound raw shrimp (peeled and deveined)
  • 6 oz chicken sausage (sliced)
  • 1 teaspoon olive oil
  • 1/2 cup chopped green peppers
  • 1/2 cup chopped white onions
  • 1/2 cup chopped celery
  • 23 garlic cloves (minced)
  • 15.5 oz canned diced tomatoes
  • 2 cups long grain white rice (rinsed)
  • 4 cups broth (chicken or vegetable)
  • 1 1/2 teaspoons Creole Seasoning (divided)
  • 1 bay leaf
  • 1/2 teaspoon smoked paprika
  • salt and pepper to taste
  • 8 oz lump crab meat (optional)

Instructions

  1. Season shrimp with Creole seasoning and set aside.
  2. Heat olive oil in a cast iron skillet over medium heat; cook shrimp until pink (3–5 minutes), then remove.
  3. In the same pan, brown sliced chicken sausage for about 4–5 minutes; remove.
  4. Sauté garlic, green peppers, onions, and celery until fragrant.
  5. Stir in flour and diced tomatoes until coated.
  6. Add rice and toast briefly in the mixture.
  7. Pour in broth and add browned sausage; deglaze the pan.
  8. Add remaining spices and bring to a boil.
  9. Reduce heat, cover, and simmer for 12–20 minutes until rice absorbs liquid.
  10. Fold in shrimp (and crab if using) gently; let cool slightly before serving.
