  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 cup cottage cheese (small curd or whipped)

  • ¼ cup grated parmesan cheese

  • ¼ cup milk (any kind)

  • 1 tsp lemon zest (optional for brightness)

  • ¼ cup chopped fresh parsley or basil

  • ½ tsp salt

  • ¼ tsp black pepper

Optional Add-ins:

  • 1 cup baby spinach (stirred in at the end)

  • ½ cup sautéed mushrooms

  • ¼ cup sun-dried tomatoes, chopped

  • A pinch of red pepper flakes for a little heat


Instructions

Step 1: Cook the Orzo
Bring a pot of salted water to a boil.
Add the orzo and cook according to package instructions until al dente (about 8–10 minutes).
Drain and set aside.

Step 2: Sauté the Garlic
In a large skillet, heat olive oil over medium heat.
Add the minced garlic and sauté for 30 seconds to 1 minute, until fragrant but not browned.

Step 3: Combine Orzo and Cottage Cheese
Add the drained orzo to the skillet with the garlic.
Lower the heat and stir in the cottage cheese, milk, and parmesan cheese.
Mix until creamy and heated through.

Step 4: Add Herbs and Seasonings
Stir in lemon zest, parsley (or basil), salt, and black pepper.
Taste and adjust seasoning as needed.

Step 5: Serve
Serve immediately, garnished with extra herbs or a sprinkle of parmesan if desired.
