⅓ cup honey
½ cup brown sugar, packed
¼ cup granulated sugar
1 large egg
1 tsp vanilla extract
1¾ cups all-purpose flour
½ tsp baking soda
½ tsp baking powder
½ tsp salt
¾ cup shelled pistachios, roughly chopped
Flaky sea salt (for topping)
Instructions
Step 1: Preheat and Prep
Preheat your oven to 350°F (175°C)
Line a baking sheet with parchment paper or a silicone baking mat
Step 2: Cream the Wet Ingredients
In a large bowl, beat butter, honey, brown sugar, and granulated sugar until light and fluffy
Add egg and vanilla extract, and mix until combined
Step 3: Mix the Dry Ingredients
In a separate bowl, whisk together flour, baking soda, baking powder, and salt
Gradually add the dry ingredients to the wet mixture, stirring until just combined
Step 4: Add Pistachios
Fold in chopped pistachios until evenly distributed throughout the dough
Step 5: Scoop and Bake
Using a cookie scoop or tablespoon, drop dough onto prepared baking sheet, spacing about 2 inches apart
Lightly flatten each cookie and sprinkle the tops with a pinch of flaky sea salt
