  • 1 cup caramel pieces (divided)
  • 1/2 cup toffee pieces (divided)
  • Sea salt (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Soften the butter in the microwave for about 20 seconds.
  3. In a mixing bowl, cream together softened butter and brown sugar until fluffy.
  4. Mix in the egg and vanilla until well blended.
  5. Gradually add flour, baking powder, baking soda, and salt; stir until just combined.
  6. Fold in 1/4 cup each of caramel and toffee pieces; set aside remaining bits.
  7. Scoop dough onto the baking sheet using a cookie scoop.
  8. Bake for about 10–11 minutes until edges are golden brown.
  9. Shape warm cookies using a mason jar lid if desired.
  10. Allow to cool slightly before drizzling melted caramel on top with reserved toffee pieces.
