Step 1: Prepare the Potatoes

Preheat oven to 425°F (220°C).

In a large bowl, toss halved baby potatoes with olive oil, oregano, paprika, salt, and pepper.

Spread them out on a baking sheet in a single layer. Tuck unpeeled garlic cloves among the potatoes.
Step 2: Roast the Potatoes
4. Roast for 25–30 minutes, stirring once halfway through, until potatoes are golden and crispy.
5. Remove tray from oven.
Step 3: Add the Feta
6. Push the potatoes slightly aside and place the whole feta block in the center of the tray.
7. Drizzle a bit of olive oil over the feta and return everything to the oven for another 10 minutes.
Step 4: Roast Until Perfect
8. Bake until the feta is soft and slightly golden and the garlic is fully roasted (about 10 minutes).
9. Remove from oven and let cool for 2–3 minutes.
Step 5: Finish & Serve
10. Squeeze the roasted garlic cloves from their skins and mix gently into the potatoes.
11. Break apart the feta and toss lightly to combine.
12. Optional: Drizzle with lemon juice and sprinkle with fresh parsley before serving.
