Ingredients
1 large head cauliflower, cut into florets
2 tbsp olive oil
½ tsp salt
½ tsp black pepper
1 tsp Italian seasoning
For the Sauce & Toppings:
1½ cups marinara sauce (low-sugar or homemade)
1½ cups shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 tsp dried oregano
¼ tsp red pepper flakes (optional)
½ cup sliced black olives
½ cup chopped bell pepper (any color)
¼ cup sliced red onion
10–12 slices turkey pepperoni or beef pepperoni (optional)
Fresh basil or parsley (for garnish)
Instructions
Step 1: Roast the Cauliflower
Preheat oven to 425°F (220°C)
Toss cauliflower florets with olive oil, salt, pepper, and Italian seasoning
Spread on a baking sheet and roast for 25–30 minutes until golden and tender
Remove from oven and reduce oven temp to 375°F (190°C)
Step 2: Assemble the Casserole
Transfer roasted cauliflower to a greased 9×13-inch casserole dish
Pour marinara sauce evenly over the cauliflower
Sprinkle with mozzarella and Parmesan cheese
Top with olives, peppers, onions, and pepperoni if using
Sprinkle with oregano and red pepper flakes for extra flavor
Step 3: Bake
Bake uncovered at 375°F for 20–25 minutes until bubbly and cheese is melted and golden
Step 4: Garnish and Serve
Remove from oven and let cool for 5 minutes
