Ingredients
• 1½ lbs baby potatoes, halved (Yukon gold or red work best)
• 12 oz fresh green beans, trimmed
• 3 tbsp olive oil
• 1 packet (1 oz) ranch seasoning mix
• ½ tsp garlic powder
• ½ tsp onion powder
• ¼ tsp black pepper
• ¼ tsp salt (adjust to taste)
• Optional: ¼ cup grated parmesan cheese
• Optional: chopped parsley or chives for garnish
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly grease it for easy cleanup.
Step 2: Prepare the Veggies
Halve the baby potatoes and trim the green beans.
Pat dry with a towel to ensure crisp roasting.
Step 3: Toss with Seasonings
In a large bowl, combine the potatoes and green beans.
Drizzle with olive oil, then add the ranch seasoning, garlic powder, onion powder, salt, and pepper.
Toss until everything is evenly coated.
Step 4: Spread on Baking Sheet
Spread the mixture in a single layer on the prepared baking sheet.
Arrange potatoes cut-side down for extra crisp edges.
Step 5: Roast Until Golden
Roast in the oven for 25–30 minutes, flipping halfway through.
The potatoes should be fork-tender and golden brown; the green beans should be slightly blistered but still vibrant.
Step 6: Add Optional Toppings
If using, sprinkle with parmesan during the last 5 minutes of roasting.
Garnish with fresh parsley or chives for a fresh finish.
Step 7: Serve Hot
Serve immediately as a side dish or make it the base for a hearty bowl with added protein.
Notes
Use Fresh Green Beans – They roast better than frozen and keep a crisp-tender bite.
Space It Out – Don’t overcrowd the baking sheet, or the veggies will steam instead of crisp.
Add Extra Flavor – A squeeze of lemon juice or drizzle of balsamic after roasting adds brightness.
Make It a Meal – Toss in sliced grilled chicken or cooked beef sausage.
Customize It – Add carrots, mushrooms, or bell peppers for more variety.
