Ingredients

1½ lbs boneless, skinless chicken breasts or thighs, cut into 1½-inch cubes

1 packet (about 1 oz) ranch seasoning mix

½ cup plain Greek yogurt or sour cream

2 tbsp olive oil

1 tbsp lemon juice

1 tsp garlic powder
-
½ tsp paprika

¼ tsp black pepper

Wooden or metal skewers

Instructions
Step 1: Make the Marinade

In a large bowl, whisk together Greek yogurt, olive oil, lemon juice, ranch seasoning, garlic powder, paprika, and black pepper.
Step 2: Marinate the Chicken

Add the cubed chicken to the bowl and toss to coat thoroughly.

Cover and refrigerate for at least 30 minutes (or up to 4 hours for maximum flavor).
Step 3: Assemble the Skewers

Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.
Step 4: Cook the Skewers
To Grill:

Preheat the grill to medium-high heat.

Lightly oil the grates.

Grill skewers for 10-12 minutes, turning every 2-3 minutes, until chicken is cooked through and has nice grill marks.
To Bake:

Preheat oven to 425°F (220°C).

Arrange skewers on a baking sheet lined with foil or parchment paper.

Bake for 18-20 minutes, turning halfway through, until chicken is golden and cooked through.
To Air Fry:

Preheat air fryer to 400°F (200°C).

Arrange skewers in the basket without overcrowding.

Air fry for 10-12 minutes, flipping halfway through.
Step 5: Garnish and Serve

Notes
