- 1.5 lbs chicken cutlets or breasts
- 1 oz packet Ranch Seasoning
- 10.5 oz can cream of chicken soup with herbs
- 1.5 cups milk
- 3 lbs russet potatoes
- 6 oz shredded cheese (your choice)
- Sour cream
Instructions
- Season the chicken with Italian seasoning, salt, and pepper. Heat olive oil in a skillet over medium heat.
- Cook the chicken for 5–7 minutes per side until golden brown; then set aside.
- In the same skillet, add remaining olive oil and butter, then sauté minced garlic until fragrant.
- Stir in cream of chicken soup, milk, Ranch seasoning, onion powder, and sour cream until smooth.
- Return the chicken to the skillet and let it simmer in the gravy on low heat for about 10 minutes.
- Boil peeled russet potatoes until fork-tender; mash with half-and-half, butter, shredded cheese, garlic powder, salt, and pepper.
- Serve mashed potatoes topped with ranch chicken and gravy.
